History of Dewatsuru出羽鶴の歴史

In 1865, our company “Yamato-shuzouten” was founded in the area of Minaminaraoka(Currently Daisen-city) by Ito Juushiro who was the 12th head of the Ito Family.

During this era Japan started to open up the country: It was the dawning of a new era. The Ito Family moved from Kansai area to Tohoku area and as landowners became involved in agriculture while representing the region. It was Juushiro who established a brewery using high quality local rice.

Ito Kyonosuke the 13th head of the Ito Family took over the business and put Yamatoshuzouten into commercial use. Toji’s (Master Brewer) desire to brew exceptional sake, the Ito family named their company “Dewatsuru” –or “crane of the Dewa Region”—in order to convey the elegance of its product.

The Environment蔵の環境

Dewatsuru Brewery is located in a mountainous area in the southern part of Akita Prefecture. The mountains surrounding the brewery are called Dewa Hill, the source of rich and clear spring water. In the same way that Akita’s four seasons and humid climate perfectly suit the cultivation of rice, its heavy snowfalls and winter temperatures are perfectly suited for brewing sake.

① Rice

The process of brewing our sake begins from the cultivation of high quality rice by the Toji (Master Brewer) and Kurabito (brewery workers). Making use of the rich soil of the region, brewery workers along with local farmers continue to produce high quality rice and cultivate their skills through the organization of a “Sake Rice Organization.”

② Water

One of the important aspects of brewing sake is quality of water. Our water comes from natural aquifers near Dewa Hill. The clear, light taste of this water is one of the characteristics of Dewatsuru.

③ Our Guiding Principle

Framed on the wall of the Dewatsuru Brewery break room, you can find our motto: “Good harmony makes good sake.” The teamwork of our Kurabito (brewery workers) and our pride in craftsmanship make it possible for us to produce high quality sake. We share these qualities with our customers.

Yamatoshizuku やまとしずく

The brand name Yamatoshizuku originated from “Yamato Brewery” which was the first company name on the date of establishment in 1865.

“Yamato”is the trade name of the Ito family, and in the brewery, there are trade marks of “Yamato” everywhere even now. Now, 150 years on, we still work with the same spirit as the brewery founders all those years ago. Our philosophy is to brew original and extremely local sake by only using particular local rice and water from within a 10km radius.

Characteristic of Yamatoshizuku 酒造りの特長

① Rice

The characteristic of Sake Rice used for Yamatoshizuku brewing is it must be rice which has grown within a 10 km radius of our brewery. This is because from the day of establishment in 1865, the use of local sake rice has been one of our most important concepts.

② Water

Going into deep in the mountains, our water source comes from a spring. About 15million years ago, this area was the bottom of the sea. Due to that the water is special, because it contains more minerals than others.

Seiden 晴田

“Seiden” was created as a brand by Dewatsuru Brewery in 2010 and its objective is to enhance the characteristics of sake rice using supreme brewing techniques, and present to you the real flavour of every variety of rice selected by us from all over Japan. The brand name “Seiden” comprises two Japanese words: “Sei” and “den.” “Sei” means a fine weather and “den” means a rice field; the name was derived from an image of a countryside view where rice thriving in green fields under the sun.

Characteristic of Seiden晴田の酒造りの特長

① Rice

We chose five varieties of sake rice from all over Japan to brew Seiden sake (Yamadanishiki, Omachi, Akita Sakekomachi, Gohyakumangoku and Oyamanishiki). Every year, we select the best sake rice grown for each variety and polish the rice to ensure that the condition of the rice is the best for brewing. Moreover, our brewery is equipped with a special machine that can check the condition of the rice and find cracked grains.

② Water

The brewery is surrounded by mountains that have been a source of a vast amount of natural water. Snow in the mountains melts during Spring and percolates through the ground. Going through many layers of natural filters, the water gushing from the well becomes the softest in Akita Prefecture, which gives Seiden sake a mild and fine flavour.

③ Brewers

In addition to pure natural water and carefully selected rice, we have an excellent brewing team which brings out the very best of ingredients and brews Seiden sake to perfection. The team comprises a master brewer with over two decades of experience, an assistant master who is also a professional farmer with an expert knowledge of rice and ambitious young brewers who share a common goal of becoming future master brewers.
